Day 1 Detox Recipe Dinner
Day 1 Salad: Quinoa Dinner
160g of Cooked Quinoa (1 cup) 2 Tomatoes 1 Spring Onion (or half of tender white onion) 1/2 of Cucumber 1/2 of Yellow Capsicum 4-6 Green Asparagus ( I use just points) Himalayan Salt 2 tbs of Extra Virgin Olive Oil 1/2 Lemon juice 10-15 Mint Leaves ...................................................... Boil 2 cups (300-3500g) of Quinoa with salt and little bit of turmeric. Use the half for this recipe and keep other half in your fridge to add it next day to your soup.
Boil the salted water and cook the asparagus for one minute. Rinse them in the cold water, it will make them keep the bright green colour.
Cut tomatoes, cucumber and yellow capsicum in small cubes. Slice the spring onion and chop the asparagus in small pieces. Add everything in the salad bowl with quinoa, add the salt, lemon juice and olive oil. Chop the mint leaves and add them on the top.
