My velouté of Asparagus recipe
To surprise your guests or just give a glamour touch to your ordinary dinner, you can prepare the healthy and refreshing asparagus in a less conventional way. Count with the time for the marinade!
Serves 6 – 8 people.
Ingredients:
3 packs of big asparagus (around 24 pieces)
1-2 packs of baby asparagus (just points, thin)
1 onion
Olive oil
Black pepper
Salt

Peel the onion and clean and cut the big asparagus in 1cm pieces. Heat the oil, fry the onion till gold, add asparagus pieces. Add salt. Cover with water (at the level of asparagus) and boil for approx. 6 minutes. (for the garlic lovers, you can add it too).
At the same time, clean the points of baby asparagus and eventually make them shorter (you can use the reminding to boil) and let them marinate in the olive oil, black pepper and salt for at least one hour. I added a little bit of lemon to the marinade. (I recommend to start with a marinade, then later on boil the reminding).
When asparagus have boiled, put them in the blender and mix. Add only a little bit of water and see the consistency. It should be thick enough, as a velouté. If you like, you can add some butter and cream but I keep it light.
Serve it with the marinated asparagus in the middle and add some grilled pine nuts.
